Secondly – my initial offset opinion could be wrong, by about 0.5C closer to display. This doesn’t affect findings on stability or repeatability – it is just numbers.

So does keeping water at a temperature lower than boiling point stop the problem of de-aeration (for lack of a better term) ?
I was always told that boiling water that has already boiled once was a big no-no, and it made bad tasting tea/coffee, so I wonder if a persistently raised temperature might also cause the same problem.

How big is the boiler? When it’s priming, does it ‘disable’ you from obtaining H20 until it reaches the set temperature? How long does it take from prime to set, let’s say, in secs/cl?

It’s looking great. Is there any innovation for creating a head that provides a softer drop? The current outlet appears to run water through quite fast which, for example, could disrupt the coffee in a Chemex when you attempt a pre-wet, or if you ever considered using a swiss gold filter.
i also noted the drop looks fairly high – was there ever any thought about an adjustable head to allow you to get the water closer to the coffee?
