Last night I was up in Edinburgh installing what I think is the first Synesso Hydra in the UK up in Kilimanjaro Coffee in Edinburgh. Kilimanjaro is run by Jonathan Sharp, current Scottish Barista Champ. (Kristen, who came 2nd, is from sister cafe Wellington Coffee).
I am sure most of you reading this blog will know about the Hydra, but for those that don’t it is very similar to a traditional Synesso Cyncra except that it has a pump per group and independent brew lines running throughout the machine.

You can see each group has its own pump pressure gauge. This means that you can manually pre-infuse a group with the others running, and you see less impact on the brew pressure when another group is engaged. I suppose the big advantage is a combination of consistency and a reduction in things to worry about – which is really what the best equipment is designed to give you.

I was lucky enough to be the person that pulled the ‘lid’ off the pallet, when this machine arrived in London.
I let out a little gasp. It’s lovely.
Shouldn’t the hydra have 9 heads?
